I was getting  bored with fish until I found this recipe. I then went a step further and jazzed up the bake potatoes that I served it with.  My two-year old loves potatoes and I thought this would be a fun way to serve it. She also loved the fish.
 
What you’ll need:
 
Bread Crumb Mixture:
  • 4 Slices of white bread without the crust (Cut into small pieces)
  • 1 teaspoon lemon zest
  • 1/4 cup grated parmesan
  • 2 tablespoon olive oil
  • 1/4 cup walnuts, chopped

Ingredients for the Tilapia

  • 4-5 Tilapia fillets
  • Pinch of salt and freshly ground black pepper
  • 4 tablespoon butter (plus extra for casserole dish)
  • 1/4 cups lemon juice
  • 3 tablespoons capers
  • 2 tablespoons olive oil
  • 2 gloves minced garlic

In a food processor combine bread, walnuts, cheese, lemon zest until it has a uniform texture.  Add olive oil slowly while pulsing.

In a separate bowl season fish with salt and black pepper. Place the fillets in single layer in a buttered 9 inch casserole pan.  

In a small sauce pan melt 4 tablespoons of butter and add the lemon juice and capers, then pour the mixture over the fish. Sprinkle the top of the fish with the bread crumb mixture.

Bake uncovered for 20 to 25 minutes.

To make potatoes:

Take 5 large peeled potatoes and cut them into round  thin slices.

Drizzle with olive oil, about 2 tablespoon.

Season with  dash salt and pepper then sprinkle with italian seasoned bread crumbs.

 Baked potatoes  at 350 degrees for 1 hour or until tender.
