Sweet and Sour Chicken

As much as I don’t like cooking I’ve been having a blast trying a lot of new recipes.  I found this recipe from knottie Tammara’s food blog, and like everything else that I do I had to put my own spin on it. It calls for breading and frying your own chicken before baking it with the sauce. Well I gave it a shot and it didn’t work the way that I would have liked. I had oil all over my kitchen floor and the chicken just did not fry the way it should have. My creative husband came up with the idea of using chicken strips, you can use cooked strips or raw strips. I used cook.  So in this recipe I used Tyson chicken strips and It turned out awesome. I would suggest making extra sauce because of the breading on the chicken there wont be much sauce left to put on the rice.

Things that you’ll need.
  • 1 Bag of Tyson Chicken strips or any brand chicken strips(6-8 servings)
  • 8 inch Pyrex or baking dish
For the Sweet and Sour Sauce: (I made a double batch of sauce for the chicken)
  • 3/4 cup sugar
  • 4 tablespoon ketchup
  • 1/2 cup vinegar
  • 1 tablespoon soy sauce(I used ginger soy sauce)
  • 1 teaspoon  garlic salt
  • 1/2 teaspoon of black pepper

To make the extra sauce follow the directions above. You will need to bring the sauce to a boil for between 6-8 minutes.

Preheat oven to 325 degrees.

Combine ketchup, vinegar,soy sauce and stir. Then add sugar, garlic salt and stir.

  • Place chicken strips in a 8 inch baking dish
  • Pour mixture and coat the chicken strips
  • Turn chicken every 15-20 minutes
  • Bake for 1 hour then serve over rice

Directions for white rice.

  • Follow directions on box for serving size or you can get the rice in a bag and boil it for 10 minutes and voila instant rice
